Apple Dumpling Rolls

Ingredients & Measurements: 
- 3 1/2 cup tart apples, thinly sliced
 - 4 tbsp plus 3/4 cup sugar, divided
 - 1/2 cup water
 - 2 tbsp lemon juice
 - 1 tbsp butter, melted
 - 2 cups flour
 - 3 tsp baking powder
 - 1/4 tsp salt
 - 1/4 cup shortening
 - 1 egg, beaten
 - 1/2 cup milk
 - 1/2 cup brown sugar, packed
 - 1/4 tsp cinnamon
 
Optional Lemon sauce
- 1/2 cup sugar
 - 2 tbsp cornstarch
 - 1/4 tsp salt
 - 1/4 cup water and 3/4 cup water divided
 - zest of one lemon
 - 1/4 cup lemon juice
 - 2 tbsp butter
 
Instructions: 
Apple Dumplings in Syrup
- combine apples, 2 tbsp sugar and water
 - boil for 5 minutes.
 - drain apples; reserve syrup
 - Measure 3/4 cup syrup, adding water if necessary; pour this into 8x8 baking pan.
 - Stir in 3/4 cup sugar lemon juice and butter.
 - Preheat oven to 350 F. Place pan in preheating oven while you prepare the rolls.
 - In large bowl, sift flour, 2 tbsp sugar, baking powder, and salt.
 - Cut in shortening to resemble coarse meal. In a separate bowl, combine egg and milk
 - add to flour mixture; stir with a fork.
 - transfer dough to to floured board; pat into 18x12 rectangle.
 - cover dough with cooked apples
 - sprinkle with brown sugar and cinnamon
 - roll, jelly roll style, and cut into 2 inch slices.
 - place slices, cut side down in syrup in 8x8 pan
 - bake for 35 to 40 min or until lightly browned.
